| MASAI BEEF SALAD W/ IMPERIAL DRESSING According to legend; this dish is thought to have been brought to Pre-Columbian America across the Atlantic Ocean then known as the Ethiopian Sea from east Central Afrika by Afrikan explorers before 900 A.D. and has come to symbolize the cultural richness and bounty that Africa has given to the World. Masai Beef W/ Imperial Dressing is a traditional favorite enjoyed by Africans in Diaspora throughout the year, on festive occasions and during the celebration of Kwanzaa. Depending on how and when it is served Masai Beef W/ Imperial Dressing is a complete meal, a main dish or one course of a holiday festival banquet. However, it is most often enjoyed family style along with a deep-dish maze (corn) casserole Nilotic Ni•lot•ic (nī-lŏ-tĭk) adjective 1. Of or relating to the Nile or the Nile Valley Of or relating to the peoples who speak Nilotic languages noun A large group of Nilo-Saharan languages, spoken in southern Sudan, Uganda, Kenya, and northern Tanzania and including Masai 18-20 OZ. Grilled Beef Tenderloin (*medium rare: [20%-40% pink in the middle (*not bloody) for maximum tenderness] medium & thick sliced strips) or (Carved 18-24 oz. 1” thick grilled chuck roast, carefully remove all bone, fat and membrane) 1¾ Cup Firm Red Ripe Tomatoes (sliced medium small wedges) 1½ Cup Cucumber Hearts (peeled & quartered) 2- Cups Lettuce (thinly sliced strips) Lettuce large whole broad leaves (for serving bed) ½ Cup Green Bell Pepper (chopped ¾” to 1” squares) ½ Cup Orange Bell Pepper (chopped ¾” to 1” squares) ½ Cup Red Bell Pepper (chopped ¾” to 1” squares) ½ Cup Golden Bell Pepper (chopped ¾” to 1” squares) [if available] ½ Red Onion (thinly sliced ¼ do not chop) Green Onions IMPERIAL DRESSING Combine and whisk thoroughly: 1/3-cup extra virgin olive oil 1/3-cup red wine vinegar 1-tbsp fresh squeezed garlic oil 1½ tsp curry powder ½ tsp Red Pepper (hot) (crushed is ok!) *Ground is much, much better ½ Green Pepper (hot) 1-tsp blended (marjoram, thyme, rosemary, savory, sage, oregano, basil) or Zesty Italian Dressing (Virginia Brand Vidalia Onion Honey French Royale can be substituted it’s a favorite; try others you like) Toss all vegetables well with five tbsp of our dressing being careful not to bruise the vegetables Salt to taste Arrange beef in lettuce bed for individual servings *(presentation esthetic is key) Spoon over vegetables Pour over dressing *(making sure ingredients are blended well) Some Garnish Considerations: sliced & fresh fruit; pineapple, melon, figs, kiwi, Strawberry, peach, apple, papaya, etc. ** (keep it neat and simple) sprinkle fruit very lightly with allspice and/or cinnamon Serve immediately (slightly chilled) serves four adults Enjoy! |
